Normally persons working at Level 2 should be able to competently carry out simple and complex routine work activities and to collaborate with others.
Food Preparation And Cookery – Level 2
The CVQ Level 2 in Food Preparation and Cookery is for individuals whose role in the hospitality sector requires well developed behavioural competencies but whose scope for independent decision making and for bringing about change is limited. Each unit of study is accompanied by a “Hands on” completion project. Persons who attain this qualification can operate independently at this level.
They are likely to be in roles where they are required to:
- Clean food production areas, equipment and utensils
- Maintain and promote hygiene in food storage, preparation and cooking
- Prepare and cook basic meat, poultry and offal dishes
- Prepare and cook vegetables for basic hot dishes and salads
- Maintain a safe and secure working environment
Relevant occupations include:
- Assistant Chef
- Food Preparation Assistant
The holders of this qualification will demonstrate a range of personal presentations and demonstrations of team-work skills and literacy skills.
To achieve this qualifications all core units must be achieved plus a minimum of three Level 1 electives and one elective from Level 2.

- Clean food production areas, equipment and utensils
- Maintain and promote hygiene in food storage, preparation and cooking
- Prepare and cook basic food dishes
- Prepare and cook basic fish dishes
- Prepare and cook basic meat, poultry and offal dishes
- Prepare and cook basic soups
- Prepare and cook vegetables for basic hot dishes and salad
- Prepare, bake and decorate basic cakes, cookies and biscuits
- Prepare and cook basic cold desserts
- Prepare and cook basic hot desserts
- Prepare and cook basic dough products and quick breads
- Prepare and cook basic pasta dishes
